Every spring, before Navruz, my grandmother makes sumalak. People in our neighbourhood say it is the best sumalak in the city. For years, I asked her for the secret, but she only smiled.
Har bahor, Navro‘zdan oldin, buvim sumalak pishiradi. Mahallamizdagi odamlar uni shahardagi eng yaxshi sumalak deyishadi. Yillar davomida undan sirini so‘radim, lekin u faqat jilmayardi.
This year, she finally invited me to help. We stirred the big pot all night with our neighbours. Women sang songs and told stories, and the children played around the fire.
Bu yil u nihoyat meni yordamga taklif qildi. Qo‘shnilarimiz bilan katta qozonni tun bo‘yi kavladik. Ayollar qo‘shiq aytib, hikoyalar so‘zlashdi, bolalar esa gulxan atrofida o‘ynashdi.
In the morning, the sumalak was ready, sweet and brown. I asked again about the secret. Grandmother laughed and said, “The secret is not in the pot. It is the people around it.”
Ertalab sumalak tayyor bo‘ldi, shirin va jigarrang. Yana sirini so‘radim. Buvim kulib: “Sir qozonda emas. Sir uning atrofidagi odamlarda”, dedi.
Making sumalak is not easy. First, the women grow wheat in trays for about a week, until it is green and long. Then they crush it, mix it with water and flour, and cook it in a huge pot for almost twenty-four hours. Someone must stir it all the time, or it will burn.
Sumalak tayyorlash oson emas. Avval ayollar bug‘doyni laganlarda taxminan bir hafta, u yashil va uzun bo‘lgunicha o‘stirishadi. Keyin uni ezib, suv va un bilan aralashtirib, ulkan qozonda deyarli yigirma to‘rt soat pishirishadi. Kimdir uni doim kavlab turishi kerak, aks holda kuyib qoladi.
Some women also put small stones in the bottom of the pot. They help to stir the sumalak and stop it from burning. There is a tradition that whoever finds a stone in their bowl will have a lucky year.
Ba’zi ayollar qozon tubiga mayda toshlar ham solishadi. Ular sumalakni aralashtirishga yordam beradi va kuyishdan saqlaydi. Kosasidan tosh topgan kishining yili omadli bo‘ladi degan an’ana bor.
